Cucumber Salad + Marinated Mushrooms Gluten-Free, Paleo, Keto, Raw, Vegan, Easy Recipe

Before I learned to cook, I was 50 pounds overweight. I learned to prioritize my body, mind, and spiritual health through intentional psychedelic use and meditation. I realized that most of the food I was buying from restaurants was lower quality and higher calorie than what I could cook at home.

Below are the recipes for an epic summer lunch that I recently served in Costa Rica for a women's retreat by Alexis Asbe.

This summer lunch is cooling, detoxifying, and delicious.

This is also gluten-free, vegan, paleo-friendly, and raw–so great to serve at a summer party with different dietary preferences.

Cucumber Salad for 4

  • Slice 2 cucumbers into quarters and then 1/4" slices. Doing some peeling first is typically good but don't take off all the skin.

  • Slice 2 tomatoes into bite-size

  • Drain 1/2 can of olives

  • Chop up 1-2 bunches of Parsley

  • Mix all veggies together

  • Juice 2 limes or lemons over the veggies, or balsamic vinegar

  • Sprinkle with salt & pepper

  • Mix up and taste how you did. Add more acid or salt as needed.

Raw Marinated Portobello Mushrooms for 4

  • Press or mince 4-8 garlic cloves

  • Toss garlic with 1/4 cup of GOOD balsamic vinegar, add some salt & pepper, stir a lot and let sit while you prepare the mushrooms

  • Brush 4 portobello mushrooms with a damp cloth to clean them (mushrooms absorb too much water if you wash them in the sink)

  • Slice the mushrooms (including stems) very thinly

  • Toss mushrooms in garlic-vinegar mix to coat everything

  • Let sit for at least 10 minutes, tossing to coat about every few minutes. The mushrooms will change texture and be delicious when they're ready.

  • Add 1/4 cup of GOOD olive oil or MCT coconut oil and toss to coat.

  • Taste your creation. Add more salt or pepper if you desire.

You can prepare this up to 3 days in advance and keep it in the fridge

Make it a Mediterranean-inspired Feast

Buy hummus, babaganosh (eggplant dip), and pita or GF crackers to serve with your Mediterranean-inspired feast.
