Insanely Easy Healthy Kale Salad in 48 Seconds

Learn how to make my favorite Kale salad in just 48 seconds šŸ‘†šŸ»

I make this Kale Salad for every Radical Silence meditation retreat that we host. From this base you can add anything you want. Hereā€™s the ingredients Iā€™m using plus all the easy substitutions you can make to use up what you already have.

šŸ„¬ Kale ā€” Any type of Kale. Get 2-3 bunches or 1 large bag.

šŸ‡ Balsamic Vinegar ā€” About 1/4 cup. Any vinegar works. Apple cider vinegar is my second favorite here.

šŸ§„ Garlic ā€” Up to 2 bulbs. Freshly diced garlic is what I recommend. The pre-chopped stuff loses some of the magic. If you donā€™t like garlic you could try shallots, onion, or green onion.

šŸ•Šļø Extra Virgin Olive Oil ā€” About 1/4 to 1/2 cup. Avocado Oil is also great for this. If youā€™re going to splurge on one ingredient, this is the one. Go for higher-quality olive oil sourced from a single country if you can. Weā€™re avoiding the cheap oils by making our own dressing so donā€™t accidentally put vegetable oil in this. 

šŸ Agave / Honey / Maple Syrup ā€” About 2 tablespoons. Just a tad of sweet will add to the depth of this dressing. You can skip this ingredient.

šŸ’Ž Salt ā€” About 1 teaspoon. I use salt but the seasoning is up to you. You can use kelp granules for a low-sodium substitution for salt thatā€™s rich in minerals. 

šŸ‹ Lemon / Lime ā€” 1-2 lemons or limes squeezed fresh will brighten this dressing. Totally optional. (Not shown in video.)

šŸ„— Salad Topping(s) ā€” Iā€™m using bell peppers in this video. Use WHATEVER you like to add another texture to the salad. 

  1. Chop the Garlic or use a Garlic Press to get tiny Garlic. Place Garlic in a jar with a lid (that youā€™re going to shake up). 

  2. Cover the Garlic with Vinegar. Add the Oil, Agave, Salt, and Lemon. Shake the jar super hard to combine.

  3. Get out a big salad bowl and tear your Kale into bite-sized pieces.

  4. Dump the dressing over the Kale. You can toss it a couple of times with spoons but then you really need to get in there with your hands.

  5. Massage the dressing into the Kale with your hand. Start to break down those tough Kale pieces and get the flavors really mixed together.

  6. Add any other salad toppings you like and toss before you serve it.

  7. Congratulate yourself for making a top tier healthy salad.
